Deliciously Simple Paleo-Friendly Family Dinner

Embracing a paleo lifestyle doesn’t mean sacrificing flavor or family-friendly meals!

In fact, it opens the door to a world of wholesome and delicious ingredients that can create a memorable dining experience for the whole family. 

Today we’ll guide you through an easy-to-make, paleo-friendly dinner that will satisfy even the pickiest eaters at your table.

Main Course: Grilled Lemon Herb Chicken Skewers

Ingredients:

  • 2 pounds of boneless, skinless chicken breasts, cut into bite-sized chunks
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions:

  • In a bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and pepper. Mix well to create the marinade.
  • Place the chicken chunks in a resealable plastic bag or a shallow dish and pour the marinade over them.
  • Seal the bag or cover the dish and marinate the chicken in the refrigerator for at least 30 minutes, allowing the flavors to infuse.
  • Preheat the grill to medium-high heat.
  • Thread the marinated chicken chunks onto skewers.
  • Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
  • Serve the grilled lemon herb chicken skewers with your favorite paleo-friendly side dishes.

Side Dish 1: Roasted Sweet Potato Wedges

Ingredients:

  • 4 medium-sized sweet potatoes, peeled and cut into wedges
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss sweet potato wedges with melted coconut oil, paprika, garlic powder, salt, and pepper.
  • Spread the sweet potatoes in a single layer on a baking sheet.
  • Roast in the preheated oven for 25-30 minutes or until the wedges are golden brown and crispy.

Side Dish 2: Fresh Avocado and Tomato Salad

Ingredients:

  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  • In a large bowl, gently combine diced avocados, cherry tomatoes, red onion, and cilantro.
  • Drizzle lime juice over the salad and toss gently.
  • Season with salt and pepper to taste.
